Popis: The characterization of the north-west Spanish honeys was carried out on the basis of different parameters: density, viscosity, refractive index, glass transition temperature, pH, electrical conductivity, ash, sugars, and water activity. The influence of certain characteristics and honey composition (based on water content) on different physico-chemical properties was analysed.
