燕窩之補: 燕窩的社會生命與效力

Popis: | 本研究是關於“補”這一概念或“價值”、以及它的物化體現—華人飲食中的以燕窩為代表的補品的探索,借用物的社會生命(Appadurai 1986) 和人類學價值理論(Graeber 2001),以及形成的生物-社會這一概念(Ingold and Gísli Pálsson 2013),以馬來西亞砂拉越、香港上環、中國大陸為案例,本研究分別探究了燕窩在時間和空間層面上的生產、貿易和消費方式的變遷,以及在這個過程中燕窩象徵意義的變化和價值的生產、累積、轉譯和實現。 This study is about "nourishing" and the concept of "value" and its embodiment: it’s about edible birds’ nest(EBN) as tonic food in Chinese culture. Taking the approaches as proposed in The Social Life of Things (Appadurai 1986), The Anthropological Theory of Value (Graeber 2001) and Biosocial becomings (Ingold and Gísli Pálsson 2013), and based on case studies in Sarawak (Malaysia), Sheung Wan (Hong Kong), and mainland China, the present study seeks to explore changes in the production, trading and consumption patterns of EBN. The study shows how EBN’s value are created, produced, accumulated, translated and finally, realized on both spatial and temporal levels. Over the past three decades, EBN production in Sarawak has undergone the transformation from mainly cave nest collecting to swiftlet farming, and EBN trading in Sheung Wanexperienced such changes accordingly. As for in mainland China, not only the demand for EBN increased as a result of an emerging “new rich” created by the Economic Reforms,there also appeared new ways of understanding, desiring and consuming EBN as a result of the increasing privatization process. Although these processes change the symbolic meanings of EBN, this studies suggests that symbolic meaning constitutes only part of the value of the bird's nest. By emphasizing human labor inputs, imagination and historical narrative, emphasis on quality of EBN, as well as the joy and strength brought about by eating it, this study argues that in addition to mental and social structural meanings, the efficacy of EBN is more important in understanding contemporary practices and perceptions. This study explains tonifying efficacy of EBN in terms of Value (including both symbolic meanings and efficacy), suggesting that the reason why human beings could perceive and experience the tonifying efficacy, as if the thing could act upon human beings, is because ultimately, EBN is a human product. This means human beings are producing EBN on the material and imaginary level simultaneously and constantly. In a way similar to commodity fetishism, by experiencing tonifying efficacy, people are recognizing each other and the value of labor.
