Chitin and chitosan are natural amino polysaccharides and environmentally friendly modern materials. These substances are biologically active (lowering cholesterol, lowering blood fat, lowering blood pressure, increasing immune function), film forming, and gelling; Biocompatibility (low toxicity, no antibody production, etc.), positive characteristics (antibacterial, hemostasis, adsorption) in acidic solutions. Chitosan is a derivative of chitin, which is one of the most abundant organic substances in the natural world. Chitosan is made from chitin as a raw material, and is refined. It has a cationic macromolecular basic polysaccharide polymer and has unique physical and chemical properties and biological activation functions. The main quality indicators of chitosan are viscosity and amine content. The antibacterial activity of chitosan is affected by factors such as the degree of deacetylation, molecular weight, chelation ability, hydrophobicity, hydrophilicity and physical state. This thesis explores the physical and chemical properties of chitosan, and uses chitosan to modify the antibacterial ability of chitosan by double-convex electro-titration chemical modification, and then carries out the inhibition test of Aiwen mango anthracnose. 1% chitosan and 1% polyvinyl chloride were used to test the number of growth of the mixed membrane to obtain the best antibacterial concentration of 0.6% chitosan and 0.4% polyvinyl chloride. The film results can be used. The shelf life of fruit racks is extended and fruit corruption is slowed down. In the second stage, the bacteriostasis experiment was carried out in liquid form. The experiment was carried out with 0.1% chitosan, 0.01% TWEEN80 and 0.01% osmanthus oil. The results showed that the addition of chitosan, TWEEN80 and osmanthus oil to the liquid inhibited the liquid. The best effect of the bacteria, because TWEEN80 is a non-ionic surfactant, soluble in water, can act as a lubricant between chitosan and osmanthus oil; the best antibacterial effect is obvious. With the general concern of food safety issues and rapid development of technology, the search for a safe and efficient biological preservative is the current research trend. Chitin, chitosan and its derivatives can solve the waste problem and reduce the impact on the environment because of their multi-functionality and environmental friendliness.
