Food Safety Perceptions and Personal Hygience Practices among Street Food Handlers in Chiayi¸Taiwan

Popis: | 106 The purpose of this study was to investigate the relationship between food safety perceptions and personal hygience practices among street food handlers in Chiayi¸Taiwan. In addition, this study will test the relationship among these variables. The total of 385 questionnaire were collected, and accepted 347 valid samples after questionnaire survey. The respondants was 90.13 %. Data is analyzed by SPSS, with statistical analyses including descriptive statistics, t tests, one-way ANOVA and regression analyses. The scales of personal hygience practices during analysis are higher than what are typically found in food safety perceptions, and some gaps are identified. A positive correlation is also found between food safety perceptions and personal hygience practices dimensions. Regression analysis further demonstrates that practices with personal hygience can accurately predict food safety perception components. Although food handlers may be aware of food safety perceptions, they do not understand critical aspects of food safety perceptions such time and temperature abuse during storage and preparation of food by street food handlers. In order to prevent food borne illnesses, street food handlers need to access and improve operator’s knowledge, personal hygiene and the hygiene practices on food safety to consumer. |
