Oxidative Stability of Algae Oil and Its Release Characteristics of Self-emulsified Gel Carrier with Oryzanol

The n-3 PUFA supplements in health food market takes up 90% of the acceptance, and that market size continues to grow. Fish oil was not the only choice and the alternative supplements include krill oil, seal oil and algae oil. The characterization of microalgae has provided with artificial cultivation, short growth cycle, and a huge oil accumulation. The n-3 PUFA mainly consists of high-carbon and high unsaturated, whose oxidative properties are different from vegetable oil. In the research, Rancimat is used as the oxidation model. The oxidative characterization of n-3 PUFA by PCA and AHC show that many quality monitoring indexes are closely related to the oxidation induction period. The tocopherol loses the protection effect of fatty acids during oxidation induction period, followed by a significant change in fatty acids. In the oxidation monitoring process, we found that TOTOX, p-AV and POV of oxidation level had good linear relationship, which can be used as the quality control of n-3 PUFA products.The volatile compounds are detected during lipid oxidation, including 13 aldehydes, 9 hydrocarbons, 9 cyclic compounds, 7 alcohols, 4 benzene compounds, 4 ketones, 3 furans, 1 ester and 1 pyrrolidine. We observed 2,4-heptadienal, 2-propenal and 3,6-nonadienal have a good linear relationship with oxidation level, which can be applied in the quality control, shelf life judgment and sensory description. Algae oil reduces the oral utilization and the physiological activity because of its non-polar property. In this study, the self-emulsifier system consists of algae oil, Tween 80 and Span 80.The algae oil immobilization is 40~60%, and the addition of the oryzanol is helpful for microminiaturization of particle size. The gel particle combined with self-emulsifier provides a positive stomach protection and release emulsion droplets in intestinal tract. Therefore, oryzanol/ algae oil improve oral efficiency due to increasing the enzyme affinity and the absorption area.
