Acculturation is a part of expatriates'/immigrants' acclimatization to the new locale. The current thesis explores how expatriates acclimatize to their lives in the new country in terms of food. As they face with a food culture that is different from their home country, different variables such as time, personal factors, and culture would influence one's process of acculturation. Difference in attitudes towards Indonesian cuisine thus emerged. After their return to Taiwan, how their experiences in Indonesia may affect them, making it necessary for them to re-acclimatize back to their home country, is also one of the foci of this study. For comparison purposes, participants were grouped into two based on the time they spent overseas, with one being about six years and the other 15-30 years. Attitudes towards Indonesian food differed when contrasted against participants' time in Indonesia, their age, and their life experiences in Taiwan. Personality and identification towards Indonesian cuisine also have similar impacts. Indonesian cuisine has different meanings to these expatriates. Whether they choose to seek out and eat Indonesian food in both Indonesia and Taiwan are representations of their acculturation and nostalgia for their lives in Indonesia. Through the aforementioned issue, the current thesis will discuss expatriates' identification and attitude towards Indonesian food.
