Flavor is the core of culinary arts, every Chinese dishes with Chinese flavor has many cultural backgrounds to support. Currently, there is less use of scientific methods to discuss the "flavor" for teaching materials and teaching platform on the market, there are also fewer books to discuss the correlation between each type of Chinese flavor. According to the above reasons. This study attempted to discuss the seasoning of Chinese dishes based on Social Network Analysis(SNA),and explore the correlation between Chinese flavor. Social Network Analysis can incept the relationship between the nodes and the links, the research tools are widely used, it included sociology, information science, economics, history and biology. This study organized 19 kinds of Chinese flavor theory from the documents, and recording the seasonings and recipes of Chinese flavor theory. To collect seasonings for 210 Chinese dishes from the network and cookbooks. Using cluster analysis and cohesion analysis from "NetMiner2.4", to explore the relationship between the seasoning and usage frequency, to interpret the selection of the recipe. The results can be expected to help catering staff, when they learn to cook, they can refer the theory. They will understand Chinese dishes with Chinese flavor.
