Popis: | 104 Based on the perspective of services production, the aim of this study is to explore how to improve operation processes and work space of the infield of the restaurant for enhancing service capacity. One military restaurant in the Hsinchu city considers being a case in the study. The tools of Seven Wastes and 5S are used to improve restaurant’s service capacity. Results show that the waiting times of dealing with the ingredients are reduced; the working space becomes larger by inducing placement system and labeling; the ingredient wastes are decreased. Moreover, the staffs’ overall satisfactions are increased through the improvement activities. |
