Investigation of Taiwan Fresh-Cut Vegetables and Fruits in Factories and Convenience Stores Products Sanitation Quality

Recently, in Taiwan the industry and commerce were rapid developed, FDA of Taiwan recommending the daily consumption of at least five daily servings of vegetables and fruits.People considerable evidence of the health benefits associated with the consumption of fresh vegetables and fruits. Fresh vegetables and fruits were contain vitamins, minerals, organic acids and others nutrients. Which were Fresh vegetables and fruits under food processing will becoming browning reaction or microorganism contamination. So part of vegetables and fruits factory cloud be used illegal food additives to prevent these happen. In this study we were sampled 3 times from 3 fresh cut vegetables and fruits factories, includes one root and stem vegetables, one leaves vegetables and fruits factories. We were analyzed the sample chemical indicators: hydrogen peroxide, sulfite, preservatives, pesticide residue and chlorine residue and microorganism indicators: coliforms and Escherichia coli. Total of 41 samples includes 30 vegetables and 11 fruits, all inspection items were qualified, 100% pass the Taiwan Food and Beverage regulation standard. 41 samples: have 9 samples were pesticide residue, the detected, 22% detect rate; have 7 samples were chlorine residue detected, 17.1% detect rate; 22 samples were coliforms detected, 53.6% detect rate; hydrogen peroxide, sulfite, preservatives and E. coli were not detectable. Fresh vegetables and fruits products are more facility to get and use, so they become more popular since which products items and amount are increase than last year. We were analyzed the sample chemical additives: hydrogen peroxide, sulfite and chlorine residue; microorganism indicators: coliforms, Escherichia coli, Salmonella Staphylococcus aureus and Camphylobacter. Total of 56 samples includes 34 vegetables and 22 fruits, all inspection chemical additives items were qualified, 100% pass the Taiwan Food and Beverage regulation standard. 7 samples were coliforms over qualified: included 4 vegetables and 3 fruits products, the unqualified rate was 13.6%.
