Popis: | 98 In the respect of tourism psychology, food and beverage service is one of the essential segments in tourism; based on the yearly tourism statistics in Taiwan, Taiwanese food is always one of the main attractions as well. Since the market of the food and beverage industry is more and more competitive, the innovative service is also becoming important and influential. Thus, the present research integrated three fields of culture, travel, and experience to create for tourists from worldwide a new food culture trip by DIY experience, so as to strengthen their knowledge of Taiwanese culture and construct the service components of Taiwanese cultural cuisine restaurants. The service components include activity planning, restaurant qualification, operating, popularizing, and marketing. The restaurant which practiced this innovative service increased the rate of business volume by 10% in average, and the tourists were highly satisfied with the activities and had the revisiting willingness. The service components of Taiwanese cultural cuisine restaurants built by this research provided business value and enriched the business management of the rrestaurant in case. The achievements of this research showed that the service components are acceptable and applicable. |
