Isan Food Service Pattern of Maha Sarakham Province Based on the International Service Standard

Popis: This study attempted to:1) analyze the appropriate dishes of Isan foods in Maha Sarakham province that could be served based on the international service standard, and 2) suggest a service pattern for Isan food following the international service standard. The study collected data from in-depth interviews and workshops with key informants consisting of 70 participants selected by purposive sampling from local scholars, operational staff, food producers, and female community members.The data was analyzed by a qualitative method and later the results were arranged and presented in a descriptive analysis. The study found that there were 5 dishes of Isan foods in Maha Sarakham province that could be properly served following the international food service standard including 3 dishes of Kwao Rai in Nachueak District: fish products i.e. Pla Som (pickled fish), Pla Yor, and Pla Kuan Rang. Another 2 dishes of Takhonyang in Kantharawichai District: Lab Hed Po (Puff ball mushroom spicy salad) and Koi Khai Mod Daeng (Red ant's egg Spicy Salad). In terms of the food service pattern, the foods can be consumed with a self-service style in which it is prepared and set up at one corner in the room with the containers and utensils such as dishes, spoon, fork, dipping bowl and other required containers. The customers are allowed to have foods satisfying a portion of their needs and this food service is called "buffet".
