Popis: The use of an equipment of continuons treatment of wine VINIPAL and GASQUET leads to a stabilization of potassium bitartrate. This resuit is identical to this obtained by usual low temperature storage if the following conditions are respected : (1) Use of wines prefiltered with kieselguhr (2) Recycling of the wine at the beginning of the treatment. An addition of a low level of potassium bitartrate crystals (0,3 g/hl) in the crystalizer givers interesting results.
