Listeriosis is a severe disease caused by the ingestion of food contaminated with the bacterium Listeria monocytogenes. This zoonosis is of significance to public health because it can cause miscarriage, sepsis, and meningitis in susceptible humans. L. monocytogenes is a ubiquitous microorganism and can exist in the processing environment of meat products. Owing to the microorganism’s ability to form biofilms, hard to clean utensils are particularly prone to harboring the diseasecausing microbes. This study aimed to evaluate the presence of Listeria spp. in the utensils of butcher shops located in a municipality of Zona da Mata Mineira. Four collections were conducted in four different butcheries, where the following tools were sampled: tenderizers (n = 16), knives (n = 25), gondolas (n = 16), tables (n = 16), and grinders (n = 14). The samples were collected using surface swabs, packaged, and sent to the Microbiology Laboratory of the Hospital-Escola Gardingo Faculdade Vértice for analysis according to the ISO 11.290-1 protocol. Listeria spp. were found in all butcheries and sampled utensils, showing an insufficiency in the cleaning processes adopted by these establishments, as well as the need to implement effective corrective measures for the elimination of this bacterium in order to assure consumer health. |
