In order to explore effect of exogenous melatonin treatments on storage quality of the fresh Dictyophora rubrovolvata, using fresh Dictyophora rubrovolvata as test material, samples were devided into four treatments (CK, 50 μL/L melatonin, 100 μL/L melatonin and 150 μL/L melatonin). The storage temperature was (1±0.5) ℃. Every 3 d, the sensory quality evaluation, rot ratio, respiration rate, malondialdehyde content (MDA), browning degree index, energy metabolism, O2−·generation rate, mass H2O2 fraction and antioxidant capacity were detected. The results showed that the sensory quality of CK, Y1, Y2 and Y3 at 12 d were 2.68, 6.48, 8.52 and 7.28 while rot ratio were 30.48%, 19.29%, 5.48% and 6.99%.
