Popis: All-aqueous emulsions are useful for delivering and processing biomolecules, but their stability is constrained by low interfacial adsorption energy. Song et al. solve this problem using protein nanofibrils that form a crosslinked network, whose stability is superior to conventional colloidal capsules.
