Popis: Dairy activity, as well as the search for excellence in the quality of milk and its derivatives, are constantly evolving in Brazil. The quality of the final product is related to each of the production stages, from nutrition, sanitary management of the herd, milking management, post-milking milk refrigeration time and temperature, cleaning and sanitization of machines and utensils, to transport, storage, and time elapsed between all these steps until processing. Thus, two raw milk samples were collected per month for quality analysis, for twelve months (October/2018 to September/2019), from the refrigeration tank of dairy farms in seven regions of the state of Minas Gerais. The interaction between the variables was verified: volume of production and period of drought and rainy season, with the quality parameters: Standard Plate Count (SPC) and Somatic Cell Count (SCC). It was observed that there was an interaction between the variables production volume and time of the year only in the SPC results, in which in the rainy season and the properties with a smaller volume of milk production, we observed that the averages highest was obtained. For the SCC variable, no interaction (p0.05) was observed between the variables studied and the SCC averages, however, the highest results were observed in the rainy season.
