In this experiment, the peptides were obtained by enzymatic digestion of wheat germ proteins from river sets using neutral protease, trypsin and pepsin. In vitro antioxidant capacity of samples was determined and their polypeptides distribution was determined using polyacrylamide gel electrophoresis (SDS-PAGE).
