Cereals occupy a large area in the diet of humans. Wheat, barley, rye, oats, rice, buckwheat and amaranth are some of these cereals. Gluten is a vegetable protein found in wheat, barley and rye. Today, we see the word gluten together with different diseases, especially celiac. Wheat allergy, dermatitis herpetiformis, gluten ataxia, non-celiac gluten sensitivity are among the leading diseases. There are different diseases that do not occur directly due to gluten, but which are detected in improvements in symptoms with the introduction of a gluten-free diet. For example, if you want to use Rheumatoid arthritis, autism, diabetes, irritable bowel syndrome are some of these diseases. Individuals with a disease triggered by gluten intake begin to follow a gluten-free diet. A gluten-free diet is a diet that does not include wheat, barley, rye and flour. Individuals can consume different cereals such as buckwheat, amaranth and rice, vegetable, fruit, meat and milk groups without problems in this diet. However, there are also some gluten-free labeled packaged foods that we need to buy from outside. The content of such foods should be questioned and consumed accordingly without exceeding the limit. The common feature of individuals with a gluten-related health problem is that they see improvements in disease symptoms when they follow a gluten-free diet. Therefore, these individuals should always follow the gluten-free diet. It is also thought that the gluten-free diet and the gut microbiota affect each other. In the studies carried out by experts, the link between diseases and gluten-free diet was examined and symptom improvements were followed. Apart from diseases, the gluten-free diet has become popular among people. However, there is no conclusive information on how a gluten-free diet affects these individuals. The spread of the gluten-free diet has led to the need for a lot of research on this subject. The aim of this study is to share information about what a gluten-free diet is, gluten-free products on the market, and whether individuals are turning to gluten-free diets due to illness or other reasons.
