Determination of artificial colorings (sunset yellow) in food products : diploma thesis

Popis: U ovom diplomskom radu određivane su koncentracije umjetnog bojila Sunset Yellow (SY), u raznim prehrambenim proizvodima, spektrofotometrijskom UV/Vis i voltametrijskom metodom. Usporedbom dobivenih rezultata pomoću ovih dviju metoda moguće je ocijeniti relevantnost pojedine metode za analitičko određivanje SY. Spektrofotometrijskim mjerenjima SY je određivan pri dvije pH vrijednosti i to pri pH 7 (u čistoj vodi), te pri pH 4 (pH je prilagođen dodatkom limunske kiseline) kod valne duljine od 484 nm. Koncentracije u tekućim uzorcima, utvrđene ovom metodom, su se kretale u intervalima od 15,36 mg/L – 35,52 mg/L, dok su se u krutim uzorcima kretale od 39,82 mg/kg - 240,7 mg/kg.. Za voltametrijska mjerenja su korištene dvije metode: ciklička voltametrija (CV) i pravokutnovalna voltametrija. Dobivene koncentracije tekućih uzoraka, koristeći voltametrijske metode, su se nalazile u intervalu od 14,5 mg/L – 26,3 mg/L, dok su se koncentracije krutih uzoraka nalazile u intervalu od 7 mg/kg – 48 mg/kg. In these thesis artificial dyes Sunset Yellow is determined in food products; with Spectrophotometric UV/Vis method and with voltammetric method. Comparing final results with those two methods it is possible to evaluate relevance each method for analytic determination of SY. With spectrophotometric measurements SY was determined at two pH values, at pH=7 (in pure water) and at pH≈4 (pH is adjusted with addition of citric acid) at wavelength 484 nm. Concentrations in liquid samples, determinates with this method were inside interval 15.36 mg/L – 35.52 mg/L while in solid samples was between 39.82 mg/kg – 240.7 mg/kg . For voltammetric measurements two methods were used, cycle voltammetric and square wave voltammetric. The resulting concentration of liquid samples using voltammetric method were in the interval from 14.5 mg/L – 26.3 mg/L, while concentration of solid samples were in the interval 7 mg/kg – 48 mg/kg.
