Popis: Jedan od najčešćih uzročnika u poremećaju kvalitete mesa životinja za klanje je upravo stres. Danas je poznato da postupci sa životinjama prije njihova klanja predstavljaju najstresniji period njihova života. Ovo se osobito odnosi na transport, gdje se neizbježni postupci poput utovara i istovara, vibracija vozila, snalaženja u novoj okolini, ventilacije i uskraćivanja hrane smatraju najjačim stresorima za životinje za klanje koje mogu ugroziti njihovu dobrobit i odraziti se na kakvoću njihova mesa. Zato su optimalni uvjeti transporta te postupanje sa životinjama prije klanja esencijalni za dobivanje mesa visoke kakvoće.
One of the main factors influencing the meat quality is stress. It is well known that pre-slaughter handling has been identified as the most stressful invents in life of slaughter animals. This is especially related to transport, where unavoidable procedures such as loading and unloading, vibrations, coping with the new environment, ventilation and food deprivation are considered the most intensive stressors which can compromise their welfare and have big impact on the quality of their meat. For these reasons optimal transportation conditions and pre-slaughter management are essential for obtaining the meat of highest quality.
