Chemical composition and antioxidant activity of wild apple (Malus sylvestris (L.) Mill.)

Popis: Cilj ovog rada bio je odrediti kemijski sastav, antioksidacijsku aktivnost te ukupne fenole divlje jabuke (Malus sylvestris). Uzorci korišteni u ovom radu uzeti su s područja Hrvatske te je ukupno analizirano 9 uzoraka. Prosječan udio vode u analiziranim uzorcima divlje jabuke iznosio je 86,40 %, udio šećera 10,88 %, udio proteina 0,43 %, udio pepela 0,57 %, udio masti 0,28 % te udio celuloze 1,45 %. Antioksidacijska aktivnost divlje jabuke određena pomoću DPPH metode kreće se od 72,78 % - 81,67 %, a pomoću FRAP metode kreće se od 0,15 – 4,42 mmol/100g s.t. Udio ukupnih fenola kreće se od 905,73 – 13394,37 mg GAE/kg. The aim of this study was to determine the chemical composition, antioxidant activity and total phenolic compounds of wild apple (Malus sylvestris). The samples used in this thesis were excluded from the territory of Croatia and total number of tested samples was 9. The average water content in the analyzed wild apple samples was 86.40 %, sugar content was 10.88 %, protein content was 0.43 %, ash content was 0.57 %, fat content was 0.28 % and cellulose content was 1.45 %. Antioxidant activity of wild apple determined by DPPH method ranges from 72.78 % - 81.67 %, and the activity determined by FRAP method ranges from 0.15 – 4.42 mmol/100g s.t. The total phenolic compounds ranges from 905.73 – 13394.37 mg GAE/kg.
