| Popis: | This research work refers to the information offered by Don Ricardo Palma, in his Traditions, on four emblematic dishes of Peruvian cuisine: the seviche, the anticuchos, and the tamales, as well as the sweet mazamorra. The name of the tradition in which each reference appears is indicated, and data offered by other authors of long ago are added. Also, to rescue the old recipes for preparing the dishes mentioned, we include these, which we have taken from authors of the nineteenth and early twentieth centuries. Este trabajo de investigación se refiere a la información que ofrece don Ricardo Palma, en sus Tradiciones, sobre cuatro platos emblemáticos de la culinaria peruana: el seviche, los anticuchos, los tamales y la dulce mazamorra. Se indica el nombre de la tradición en donde figura cada referencia y se agregan datos ofrecidos por otros autores de antaño. Asimismo, con el fin de rescatar las antiguas recetas para preparar los platos mencionados, las reproducimos tal cual las hemos tomado de autores del siglo XIX y de principios del XX.
