It can be seen that Brazilian consumers are becoming especially demanding about the information available on food services. It emphasizes the importance and the consumer's right to have access to nutritional information in the preparations/snacks, whether due to a health condition that requires a dietary restriction or lifestyle. The new Brazilian legislation on frontal nutrition labeling is intended exclusively for products packaged in the absence of the consumer. Therefore, nutrition labeling is not applicable and mandatory for foods handled and prepared in food services. Given the relevance of the availability of more information about food in these places, this study aimed to evaluate the effectiveness and applicability of nutritional information models proposed for food services in the State of Rio Grande do Sul. A qualitative and quantitative descriptive research was carried out with investigations online, from October 2021 to April 2022, with consumers, managers and nutritionists in the state of Rio Grande do Sul, Brazil. Through an online menu, three models of nutritional information were evaluated, called: semaphore, alert and simplified. The models were evaluated by 27 questions in a form on Google Forms®, which resulted in a total of 552 consumer respondents. The same models were presented in two focus groups, FG1 - nutritionists/managers and FG2 - consumers. The level of acceptability, influence of the information on food choices, understanding of the models of information presented and the preference of the participants regarding the models were analyzed. Statistical tests were performed for quantitative analysis and the Iramuteq© software was used for qualitative analysis. With the results of the investigations carried out, it can be highlighted that the majority of consumers (94.1%) believe that it is essential that there is legislation that regulates the presence of information in the food of the food services.
