Twelve Lithuanian Black-and-White bull calves (n = 6 per group) were used in a trial (116 days) to determine the effect of different amounts of compound feeds in their diets on the growth rate, carcass quality and chemical composition of meat. When the amount of compound feed was reduced by half, the daily gain of the experimental bulls was by 12% lower (978 g) than that of the control bulls (1103 g), and feed intake per kg gain was by 5.75% higher. However, bulls in the experimental group consumed by 43.9% less concentrate per kg gain. The dressing percentage of carcass with abdominal fat and muscling score were insignificantly lower (respectively, by 0.78% and 0.01 unit) for the bulls fed diets with different amounts of compound feed. Different amounts of compound feed in the diets had no influence on the chemical composition of ground meat and M. longissimus dorsi. Meat of the experimental bull calves was characterized by a higher water binding capacity (0.35%), lower cooking losses (1.03%) and higher pH value (0.05 u.). The protein value index was similar in both groups of bull calves. |
