The bachelor thesis Buckwheat in Food Technology is focuses on a relatively popular and richly grown crop, it is buckwheat. Pseudo-cereal, which ranks to grain for her properties, is again on the rise after a long recession and enjoying rising popularity. The work describes origin, history of use, botanical characteristics and cultivation. To a great extent, I also focus on the chemical composition of buckwheat coatings, especially with regard to the substances most frequently found in this plant, which are very valuable to us. The next part describes technological processing in mills and bakeries. Last but not least, is mention non-food use as livestock feed and pillowcases. |
