O presente relatório reporta-se ao estágio curricular realizado no âmbito do Mestrado em Gestão do Turismo e Hotelaria, lecionado na Universidade Europeia, em Lisboa. O estágio teve a duração de três meses e englobou a passagem pelos departamentos de F&B (Restaurante, Bar e Cozinha), alojamento (Receção e Housekeeping), Economato e Direção do Hotel Vila Galé Sintra. Este relatório tem como principal objetivo a descrição e análise das tarefas desenvolvidas durante o estágio bem como a contribuição para a identificação de problemas inerentes ao departamento de F&B. Com base na experiência vivida no decorrer do estágio, identificou-se alguns aspetos negativos e, nesse sentido, foi elaborada uma proposta de valor para um possível melhoramento. This report refers to the internship carried out as part of the Master in Tourism and Hotel Management, taught at Universidade Europeia, in Lisbon. The internship lasted three months and included the departments of F&B (Restaurant, Bar and Kitchen), Accommodation (Reception and Housekeeping), Housekeeping, and Management, of Hotel Vila Galé Sintra. The main objective of this report is to describe and analyze the tasks developed during the internship, as well as to contribute to the identification of problems inherent to the F&B department. Based on the experience lived during the internship, some negative aspects were identified and a value creation proposition was consequently developed for possible improvements. |
