Production and Storage of Edible Film Using Gellan Gum

Popis: The properties of gellan gum edible membranes under different prepared conditions were studied in this research. Firstly, the results indicated that 0.08% gellan gum treatment can be obtained good tensile strength, moisture resistance and excellent gas-barrier edible films during the drying temperature of 60–70 °C. Four typical storage conditions also were tested: refrigerated conditions (0 °C), supermarket storage environment (6 °C), room temperature (25 °C) and high temperature (35 °C). The change of gellan gum edible film properties were detected in this study for the further development of high strength gellan gum edible films.
