Popis: | Providing nutritious, appetizing meals to institutionalized elderly is a continuing challenge. Menu planning must reflect sensitivity to regional, cultural, and ethnic food preferences, in addition to nutritional needs of the population to be served. In order to raise the level of awareness of dietetic technician students-future menu planners-regarding the eating habits and food preferences of the elderly, this project was undertaken in Tidewater, Virginia. Two facilities were used to interview selected institutionalized elderly patients. Results are reported, with considerations for future menu planning, as well as implications of the impact of early eating habits upon preferences in later years. |
