Popis:	YUDKIN has suggested that the dietary change most likely to be an aetiological factor in ischaemic heart disease is the replacement of a large proportion of starch by sucrose1. It is thus relevant to investigate the differences that can be caused experimentally when starch or sugar is the principal dietary carbohydrate. We report here studies on human volunteers.
