To contribute to an assessment of that issue, thispaper examines three practical questions:1. Are global diets changing, why and in what direction?2. Do consumption trends in the USA favour theMediterranean diet?3. Will changing diets stimulate trade in Mediterraneandiet products?’Are global diets changing?Cultural preferences, household demographics, edu-cation, geographic location, access to technology, andhealth and health attitudes are some of the many factorsthat work together to shape food preferences and dietarychoices.
