Use of regional and traditional food in the gastronomic offer in the Krosno County

Popis: Regional and traditional food has been increasingly popular for several years. It is the opposite of industrial food, produced in large quantities both on the global and domestic market. Without a doubt, food production with the implementation of traditional methods generally concerns regions where non-industrial, extensive agriculture predominates, i.e. poor regions that occupy a special place in European regional policy. The aim of the study was to evaluate the use of regional and traditional products in the offer of gastronomic premises of Krosno County. The scope of the work included, among other things, establishing the percentage of traditional food establishments, the share of regional dishes in the offer of establishments and their assortment structure. The survey was conducted among 30 randomly selected owners of gastronomic premises. Restaurants dominated among the surveyed units, while inns and taverns were represented to a smaller extent. The results prove that the owners of restaurants offer regional and traditional food on the menu and observe an increased interest in this type of food among customers. Among the restaurants surveyed, 80% of them offered regional and traditional dishes, but only a few of them could boast a wide range of dishes and dishes of this type. Among the dishes served the most were meat, flour and soup dishes. The preferred places to buy regional and traditional products for the surveyed restaurant owners were shopping directly from the manufacturer, shopping at the bazaars and the manufacturer’s company stores. The Krosno County abounds in gastronomic establishments offering regional and traditional dishes and products in its menu. The owners of gastronomic establishments attach great importance to the variety of dishes offered, and local gastronomy is a good way to promote regional food
