Fatty acid and sterol composition were determined on parent stock (120 mm) surf clams and their offspring grown to 60 mm size in a natural environment in Rhode Island and in a flow-through raceway system in Connecticut to determine size and/or environmental influences on these parameters. 2. 2. Higher fat and cholesterol contents were noted in the cultured, 60 mm surf clams with no significant differences in the sterol or fatty acid composition. |
