Popis: Agriculture is key on the global economy, the need to produce food impacting in the agricultural practices such as irrigation expansion and the increasing use of fertilizers and pesticides. In addition, the excess organic wastes from agro industrial activities, in whose composition are heavy metals as the zinc, that a certain amount is toxic to humans. The research was aimed at evaluating the content of zinc and identifies the influence of the type of waste, source of microorganisms and type of aeration applied by the composting process. Three combinations of sugar residues, two sources of microorganisms and two forms of aeration were developed. Variance analysis, graphs and tables of medium and multiple range tests with 95% confidence by LSD method were used. The zinc content was reduced by 30.66%. According to the factors: the material 1 (25% bagasse, 50% cachaza and 25% ash) has the highest content of zinc. All sources of microorganisms are statistically equal. The static aeration tubes is statistically different from the aeration volteos; lower values reached around 96 ppm. Then, it was determined that the correlations of both microorganisms as sources of materials with the method of aeration tubes, have lower zinc content; and the correlation between microorganisms and the source material 3 (50% bagasse, 25% ash and 25% cachaza), the most suitable in the reduction. It was identified that cachaza is the most influent waste according to their physical and chemical characteristics.
