Popis: The paper presents the materials for determining the changes in microbiological parameters of poultry products packaged in a modified controlled atmosphere (MCA). It was found that MCA allows stopping the growth of unwanted microbiota, including pathogenic one, in poultry meat and poultry products due to correctly selected components for the controlled atmosphere.
