In vitro use metabolism of Pediococcus pentosaceus Strain N6 as alternative to natural antibiotics in broiler

Popis: The continuous use of antibiotics and inappropriate doses in broilers results in antibiotic residues, thus leading to health problems. An example of LAB that can be used as an antibiotic alternative is the Pediococcus pentosaceus isolate Strain N6. Therefore, this study aims to determine the effectiveness of metabolic antimicrobials produced by the isolates of Pediococcus pentosaceus Strain N6. The method used was an in vitro test consisting of several phases including the test of supernatant antimicrobial activity with pathogenic bacteria (Salmonella typhimurium and E. coli); the test for acidic conditions, bile salts, tolerance to gastric juice, sensitivity to antibiotics, and proteolytic enzymes. The results showed that the antimicrobial activity of the supernatant against Salmonella typhimurium and E. coli bacteria was 15 mm and 18 mm, respectively. This activity is found to be tolerant to acidic conditions, such as pH 2, at 0.5% bile salt concentration, as well as gastric juice, and also sensitive to penicillin, streptomycin, and proteolytic enzymes. Furthermore, the metabolism of an isolate is a useful alternative for antibiotics in chickens.
