The intestinal barrier is a selective system protecting the intestine against infections, consisting of many highly specialized immune mechanisms. These include physical and chemical mechanisms related to the secretion of mucus by goblet cells and the specific tight junction architecture of the intestinal epithelium. The most extensive intestinal protection system consists of the biological barrier associated with the collection of immune cells organized into Peyer’s patches. All these mechanisms undergo strong modification and maturation during the course of an individual’s life. By gradually closing and sealing the barrier, these intestinal mechanisms prepare the animal for all changes in the type of consumed food, which constitutes one of the most important evolutionary adaptation mechanisms. |
