Popis: Annona squamosa L. (sugar-apple) and Annona muricata L. (soursop) are the most significant species among the genus Annona in Brazilian fruit production. Both species produce very aromatic, sweet-sour and pleasantly tasting fruits. Both sugar-apple and soursop are very attractive fruits either for fresh consumption or for the juice and pulp industries. The limitation in reaching distant markets stems from quick ripening and accentuated softening that makes fruits difficult to handle without damage and shortens postharvest life. The pattern of development of these species presents some difficulties in defining a harvest index based on fruit age. Although both are known to be climacteric fruits, on the basis of their respiratory and ethylene production patterns, they behave somewhat differently from the majority of climacteric fruits during maturation. This must be taken into account when developing storage conditions. Physical and chemical changes during maturation of these fruits as well as quality attributes are discussed. Harvesting and postharvest handling recommendations are reviewed and discussed, including storage conditions. A report on the current situation in Brazil is presented and comments are made on the need for future research.
