Popis: | The quality of pork meat is usually associated with different characteristics such as appearance, color, amount of fat, pH, and water holding capacity (WHC). The latter corresponds to the meat’s ability to retain water and it is one of the most used characteristics to obtain a high-quality product. WHC is usually estimated by analyzing the amount of water expelled by the meat sample and absorbed by a filter paper after the meat pressing. In this work, we propose an automatic methodology to estimate water holding capacity (WHC) from filter paper images of pork samples obtained using the press method. First we obtained the external region segmentation (juice released) which is then used to guide the internal region segmentation (meat sample). We compute both segmentation using basic techniques, such as thresholding and mathematical morphology. After the segmentation, we obtained the WHC value and we compared it with the ones provided by an expert. Results indicated that our approach is a feasible solution for automatic WHC estimation. |
