Popis: | Electron-microscopic investigation of gelatine gelation has been carried out. The structures of gelatine solutions and gels within the range of concentrations from 1% to 50% have been studied by the freeze etching method. It has been shown that the solutions have a globular structure. The aggregation of globules with the formation of fibrils has been observed during gelation. The gel structures depend on concentration; in low-concentrated gels (1–10%) the fibrils form a network; in 15–30% gels the clusters of globules of an arbitrary shape alongside with fibrils are observed; 50% o gelatine gels are completely globular. The correlation between mechanical properties of gels and their structure has been traced. The structural alterations of gels depending upon the storage time and also under the conditions of deformation, drying and melting have been shown. |
