Oxidative Stability of Palm Oil Packaged in Active Bilayer PE/SPI Film Incorporated with Mangosteen (Garcinia mangostana L.) Pericarp Extract

Popis: In this study, mangosteen pericarp extract (MPE) was incorporated into an active bilayer film consisting of polyethylene (PE) and soy protein isolate (SPI). The antioxidant efficacy of MPE in decelerating lipid oxidation in palm oil was investigated during storage at 25 and 40 °C for 35 days. Iodine value (IV), peroxide value (PV), p-anisidine value (AV), and total oxidation (TOTOX) value as well as the thiobarbituric acid reactive substances (TBARS) assay were used to evaluate the oxidative stability of palm oil. Palm oil packaged in PE film was used as a control. After 35 days, the formation of oxidation products such as hydroperoxides and carbonyl compounds in palm oil packaged in the bilayer film was significantly (P ≤ 0.05) decreased compared to that in the control sample. The PV, AV, TOTOX value and thiobarbituric acid (TBA) value were lower for the palm oil packaged in the PE/SPI + MPE film than the analogous values in the palm oil packaged in the PE film. Moreover, the formation of peroxides was triggered by high temperature; thus, the oxidative stability of palm oil was much lower during storage at high temperature. At 40 °C, the oxidation of palm oil packaged in the PE/SPI + MPE film was significantly different (P ≤ 0.05) from that of the control, because the MPE-treated film inhibited oxidation by slowing the oxidation of palm oil. The presence of MPE showed a good inhibitory effect on lipid oxidation at both storage temperatures as it acted as an electron donor or as the scavenger of free radicals.
