Analisis Kimia Ikan Sapu-sapu (Pterygoplichthys pardalis Castelnau 1855) dari Danau Tempe Sulawesi Selatan, Indonesia

Popis: Amazon sailfin catfish is an invasive species in Lake Tempe whose population is increasing and until now there has been no effort to use it. This study aimed to determine the content of protein, lipid, crude fiber, ash, water, amino acids, and essential fatty acids of Amazon sailfin catfish originating from Lake Tempe. The methods used include protein, fat, crude fiber, water, ash, content. Used parameters were based on SNI 01-2891-1992 and using HPLC (High Performance Liquid Chromatography). Results showed that the content of protein, lipid, crude fiber, ash and water were 15.20% ; 6.27%; 2.14%; 4.74%; and 67.19% respectively. Furthermore, the content of essential amino acids consisting of leucine, arginine, lysine, phenylalanine, threonine, isoleusine, valine, methionine, histidine, and tryptophan are as follows 5.78%; 5.30%; 4.55%; 4.45%; 3.97%; 3.44%; 3.39%; 2.42%; 2.09% and 0.67%. The content of essential fatty acids consists of decosahexanoic acid (DHA), eicosapentanoic (EPA), linolenic acid (HUFA), linoleate (LA) and arachidonic (AA) respectively as follows 0.23%; 0.06%; and 0.09%; 0.10% and 0.15%. Amazon sailfin catfish has good chemical or nutritional content, complete amino acids and essential fats, so it is recommended as a nutritious food source for public consumption, as well as for animal and fish feed ingredients.
