Popis:	Of the 165 species of eel recorded in Chinese waters (see Appendix), three (the Japanese eel Anguilla japonica, the conger eel Conger japonicus, and the pike eel Muraenesox cinereus) are exploited commercially or in aquaculture (especially the Japanese eel). This chapter focuses, as do the other chapters in this book, on the catadromous Japanese eel, but because of the importance of all eel species to Chinese people, information is provided on the other species too.
