The subject of the graduate qualification work is "Organization of production and economic activities of a specialized flour workshop for the production of rye dough products in St. Petersburg". The goal of the work is to develop a project of an enterprise to produce flour culinary and confectionery products from rye dough that meets the requirements and norms in the field of public catering. Based on the analysis of similar procurement enterprises in St. Petersburg, a new range of rye dough products was developed: wickets, rye cakes, cupcakes, gingerbread and cookies. The main points of sale of products were identified: bakery chains and a retail network. The capacity of the workshop was determined, which amounted to 835 kg per shift. Suppliers of raw materials and food products have been selected for the smooth operation of the enterprise. The production program of a specialized flour workshop has been developed, technical documentation (technical specifications, technical specifications), technological process diagrams at the projected enterprise have been compiled. Calculations of the main groups of premises were made. The plan of a specialized flour shop with the arrangement of modern technological equipment has been developed. The graphic materials show the features of connecting equipment to electricity and water supply sources. According to the company's staffing table, the number of employees amounted to 31 people, for whom a two-week work schedule was drawn up. The optimal ways of delivery of products to the places of sale were determined.Measures have been developed to ensure safe working conditions at the workplace, fire safety measures. The economic calculation showed that the company will be profitable, and the payback period will be 2 years. |
