Popis: An account is given of thermitase catalyzed plastein formation from peptic partial hydrolyzates of field bean protein. The incorporation of methionine and the enrichment of hydrophobic amino acids into the plastein peptides are investigated. The properties of the substrate and the specific conditions of the reaction considerably influence the composition and therefore some characteristics of the plastein peptides.
