Popis: | In this study, anodic stripping voltammetry was used to assess the contents of Cd, Cu, Mn and Zn in caviar of Acipenser persicus caught from Southern Caspian Sea sampling site. The range (μg g−1) of metals in caviar samples was: 0.025–0.069 for Cd, 1.08–1.76 for Cu, 0.009–0.01 for Mn and 12.9–21.1 for Zn, respectively. These levels are significantly lower than the adverse levels for human consumption based on FAO/WHO permissible limits. Therefore, caviar’s contribution to the total body burden of these heavy metals can be considered as negligibly small, especially given that caviar is a luxury product.
