РазÑабоÑана пÑоизводÑÑÐ²ÐµÐ½Ð½Ð°Ñ Ð¿ÑогÑамма каÑе на 50 меÑÑ, подобÑана конÑепÑÐ¸Ñ Ð¸ ÑÑÑановлен Ñежим ÑабоÑÑ Ñ 09:00-21:00 ÑаÑов ежедневно. Ðлановое колиÑеÑÑво гоÑÑей в Ð´ÐµÐ½Ñ ÑоÑÑавило â 463 и плановое колиÑеÑÑво блÑд â 1467. ÐÐµÐ½Ñ Ð¼Ð¾Ð»Ð¾Ð´ÐµÐ¶Ð½Ð¾Ð³Ð¾ каÑе ÑазÑабоÑано Ñо ÑвободнÑм вÑбоÑом. Ðа оÑновании полÑÑеннÑÑ Ð´Ð°Ð½Ð½ÑÑ , ÑоÑÑавлена обÑÐ°Ñ ÑÐµÑ Ð½Ð¾Ð»Ð¾Ð³Ð¸ÑеÑÐºÐ°Ñ ÑÑ ÐµÐ¼Ð° пÑоизводÑÑва, каждого оÑделÑного пÑоÑеÑÑа, Ñ ÑÑеÑом ÑÑ ÐµÐ¼Ñ ÑÑнкÑионалÑной взаимоÑвÑзи помеÑений. The topic of the final qualifying work: "Organization of production and trade activities of a catering company at the address: St. Petersburg, Moskovsky Ave., 35.The purpose of the final qualification work is the development and design of a youth cafe, at the address St. Petersburg, Moscow Ave., 35 metro Technological Institute.In the course of the work, an analysis of the scope of the cafe "Place of Opportunities" was carried out, the contingent of regular consumers was determined and justified, based on which, students and office workers, as well as residents of the district are frequent visitors. The production program of the cafe for 50 seats has been developed, the concept has been selected and the operating mode is set from 09:00-21:00h daily. The planned number of guests per day was 463 and the planned number of dishes was 1467. The menu of the youth cafe is designed with a free choice. Based on the data obtained, a general technological scheme of production, of each individual process, is compiled, taking into account the scheme of functional interconnection of premises. Calculations were also made of the premises for storing and receiving products, production workshops, auxiliary premises, premises for staff, consumers, taking into account the selection of the necessary equipment; the layout solution of the cafe was developed in a room of 250 m2. the organizational structure of enterprise management has been developed; a two-week staff schedule of employees for 24 people has been compiled; a job description for the cook of the hot shop has been compiled, optimal sources of supply of raw materials and semi-finished products have been selected; measures have been developed to ensure safe working conditions at the workplace and an economic calculation of all indicators has been made. Based on the calculations made by me, we can say that the youth cafe will be able to firmly declare its competitiveness and effectively perform the consumer function at the highest level. |
