Popis: | Food safety is a perennial issue involving major aspects of food supply such as agriculture practice, postharvest, handling, transport, storage, and processing. Various food items, obtained from food crops or secondary agriculture, are always susceptible to pathogens and their toxic products. One such pathogen is fungus and its toxic products are called as mycotoxins. Serious health conditions are associated with these mycotoxins and therefore efficient protocols are needed for the detoxification of them. According to their physical, chemical, and biochemical properties, various techniques have been proposed and widely used for the remediation of mycotoxins or mycotoxigenic fungi. This chapter highlights occurrence, monitoring, and remediation practices for mycotoxins in agriculture crops as well as other food products. |
