Sampling Plans and Guidelines for Domestic and Imported Cocoa from a Canadian National Microbiological Survey

Popis: The microbiological safety and quality of 160 lots of cocoa powder in consumer packs, bulk imported, and bulk domestic was determined using aerobic colony count (ACC), aerobic sporeformers (ASF), confirmed and faecal coliforms, Escherichia coli, yeast and molds and Salmonella. Based on the analytical results of this survey, the following 3-class acceptance plans are: ACC and ASF, n = 3, c = 1, m = 10 5 / g, M = 10 6 / g, confirmed coliforms n = 3, c = 1, m = 1.8/ g, M = 10/ g, yeast and molds n = 3, c = 1, m = 2 x 10 3 / g, M = 10 4 / g. These plans are recommended to be used as guidelines to assist future monitoring programmes. Two lots of imported cocoa powder (2.4% of imported lots) were found to be Salmonella positive.
