Popis: Bioactive compounds play an important role in human physiology, acting mainly in disease prevention. Among the various methods for their preparation, the use of greener techniques, such as supercritical fluid extraction (SFE) has gained importance because of environmental problems like global warming and water pollution. The extraction with supercritical carbon dioxide (SC-CO2) stands out due to its advantages, such as the low critical temperature and pressure required, and the absence of organic solvents. In this sense, the objective of this chapter is to present the extraction with SC-CO2, its main characteristics as well as its valuable “green” alternative for biocompounds extraction and some applications.
