This work is devoted to the organization of production and trade activities and the design of a beer restaurant in St. Petersburg.Tasks that were solved during the completion of the final qualifying work: 1. Conduct marketing research; 2. Develop a menu, a planned-calculated menu; organizational structure of enterprise management; labor protection measures; 3. To carry out an economic calculation of the main indicators of production, trade and financial activity of the enterprise.In this work, marketing research was conducted, which allowed choosing the optimal location for the planned enterprise and identifying potential consumers. The concept of the restaurant has been developed, the capacity is justified and the operating mode is set â from 13:00 to 01:00. The total number of visitors in the projected restaurant per day was determined - 668 people, and the number of dishes â 1172 pcs. The menu was developed, technological calculations were made, necessary equipment was selected. On the basis of the real plan of the room with an area of 355 m2, the layout solution of the restaurant was developed and presented. A restaurant management scheme has been drawn up, a staff schedule has been developed. The number of employees is 45 people. A two-week schedule has been drawn up for staff to go to work. Suppliers have been identified. Measures have been developed to ensure the most comfortable and safe working conditions at the workplace. The calculation of the annual economic indicators of the region's activity was made. Based on the data, it can be concluded that the beer restaurant "Bior" will begin to make a profit in 2.2 years. |
